Lactose is an important component in milk; typically the level of lactose in milk does not vary during the milking season until a cow is near drying off when it drops significantly.

Milk with abnormally low lactose is not suitable for processing and should not be offered for collection, to ensure that only milk with normal lactose levels is offered for collection a penalty will be applied as follows on milk with low lactose. A low lactose level other than at drying off needs to be investigated individually but usually indicates a problem with diet.
